美國製的五香粉裡, 沒有花椒這一味, 也許是擔心許多不敢吃辣的美國人會受不了那個特殊的麻味吧

五香粉主成分: 磨成粉的花椒、肉桂皮、八角、丁香、小茴香籽。

找到這個配方較忠於原味, How to make your own five-spice powder

Five-spice powder

2 teaspoons Szechuan peppercorns
8 star anise
2 sticks cassia (or cinnamon)
1 tablespoon ground cloves
1 tablespoon fennel seeds

1)Roast the peppercorns and star anise for 2 minutes in a hot wok.
2)Grind them with a pestle and mortar. You could use a food processor of even a coffee grinder instead, if necessary.
3)Break the cassia or cinnamon stick into pieces and grind this with the peppercorns and star anise.
4)Then you add the rest of the ingredients, mix and grind themtogether, and your mix is ready to use! The powder has a very strong flavor so use it sparingly. Store it in a cool and dark place to preserve the taste.

用於五香粉原料中的肉桂, 名稱應是中國肉桂 (cassia or Chinese cinnamon), 學名是 Cinnamomum aromaticum

在這裡看到的肉桂大多是Cinnamomum verum ("True cinnamon", Sri Lanka cinnamon or Ceylon cinnamon)

桃金孃科的丁香樹花苞, 丁香樹跟蓮霧同一科, 但是成品差很多呢
